Shortcut Kheer


One of those nostalgic desserts that usually takes forever… but if you’ve got leftover basmati rice, this shortcut version comes together fast and tastes just like home.


Ingredients

  • 1 cup cooked Basmati Rice

  • 3 cups milk

  • ½ cup condensed milk

  • ½ tsp cardamom powder

  • 2 tbsp sliced almonds (optional)

  • 2 tbsp golden raisins (optional)

Instructions

  1. In a heavy-bottom saucepan, add the milk and cardamom powder. Bring to a gentle boil, then reduce heat to low.

  2. Stir in the cooked basmati rice and condensed milk.

  3. Simmer gently, stirring often so the kheer doesn’t stick to the bottom of the pan.

  4. Cook until the milk thickens and becomes creamy. If you like a thicker texture, lightly mash some of the rice with the back of a spoon while it cooks.

  5. Add almonds and raisins if using, reserving a little for garnish.

  6. Serve warm for comfort or chilled for a classic nostalgic treat.

Pro Tip

If the kheer thickens too much after chilling, stir in a splash of milk before serving.
